Cup cake heaven!

I have a plea to Erin McKenna of BabyCakes NYC.  Please, please, please open a shop in London.  I read about Erin in the Saturday Telegraph on 18th April 2009.  She has opened a healthy cake shop in New York’s Lower East Side, but these are not just your ordinary organic wholesome cakes. She makes dairy, egg, sugar and wheat free scrumptious banana bread, ginger snaps, carrot cupcakes and her signature lemon frosted cupcakes.

My mouth is watering just thinking about them. I remember with fondness childhood teas at my Nana’s house. Bright pink, yellow and chocolate Fondant Fancies, lemon drizzle cake, ginger cake, crumpets and muffins. All these things are distant memories for me now. I have a severe allergy to nuts, and an intolerance to dairy and eggs, so cakes are a big No No, unless I try to make them myself or but free-from brands, which are never as satisfying as the real thing in my experience.

Erin has created all her recipes herself, by trial and error, which is no mean feat. This year on pancake day I threw away two pans of pancake batter that went wrong. It isn’t easy baking without milk, eggs and wheat, but it can be done. I don’t have as much patience as Erin in the kitchen; my repertoire goes as far as flap jacks, so I am full of admiration and would love to meet Erin.

I don’t live in America so I can’t enjoy these mouth-watering, delicious delicacies, but I have been dreaming of cup cakes ever since reading the article.  If you would like to find out more about Erin and BabyCakes NYC you can read the article, entitled  “Sweet mercy” on the telegraph website.

The article also contains some great recipes for carrot cupcakes, ginger snaps and chocolate brownies, which sound really simple and easy to do. They are along the lines of: mix the dry ingredients, then mix in the wet, then cook, which is about all I can handle when it comes to baking.
